It is grown by a small group of producers on farms averaging 1. 5 hectares in size, at an altitude of 1,400 to 1,900 meters above sea level. The main variety grown is Caturra, complemented by Catimor, Bourbon, Typica, and recently also Castillo and Gran Colombia, which were added thanks to farm renovations. The harvest takes place from July to September. After picking, processing takes place directly on individual farms. Producers wash the cherries, mechanically peel them, and then ferment them for 48 hours. The beans are then dried either in solar dryers for approximately 14 days or on tarps in the sun for about one week, depending on local conditions. The flavor profile of this coffee is sweet and balanced, with notes of mandarins, plum jam, and a delicate almond creaminess in the finish. It is particularly suitable for espresso preparation but also works well in a moka pot or as a stronger filter coffee.
