PESTO

  • 1 large bunch of carrot or parsley greens
  • 50 g walnuts or pine nuts
  • 1 clove of garlic
  • 50 g grated Parmesan
  • pinch of salt
  • pinch of ground black pepper
  • Extra panenský olivový olej

Instructions

    Thoroughly wash the vegetable greens (carrot or parsley), dry them, and remove tough stems. Roughly chop the leaves.

    You can briefly toast the nuts (walnuts or pine nuts) in a dry pan for a more intense flavor. Peel the garlic.

    Place all ingredients (greens, nuts, garlic, Parmesan) into a blender or mortar. Gradually add olive oil and blend or crush until the desired paste consistency is achieved.

    Season the finished pesto with salt and pepper. If it's too thick, add a little more oil. Serve with pasta or on a baguette.

Pesto from vegetable greens is a great way to use the whole vegetable and avoid waste. It tastes great with fresh pasta, on toasted bread, or as a seasoning for soups. Store in the refrigerator in a sealed jar covered with a layer of oil. Enjoy!
