Ingredients
- 250 g coarse flour
- 1½ kg tart apples
- 125 g butter
- 60 g cane sugar
- 80 g powdered sugar
- 50 g breadcrumbs
- 50 g sour cream
- 20 g ground cinnamon
- 4 g baking powder
- 1 pc egg yolk
- 1 g vanilla powder
- 1 g salt
Instructions
- 1Sift the flour together with sugar and baking powder, mix in salt and vanilla. Add butter cut into cubes, egg yolk, sour cream, and knead the dough. Divide it into halves, wrap one in cling film and place it in the freezer. Press the other half onto the entire surface of a ∅ 23 cm cake tin, the bottom of which has been lined with baking paper. Prick the dough with a fork and refrigerate for 30 minutes.
- 2While the dough is chilling, peel the apples, cut them into quarters, and then slice or grate them. Mix the apples with sugar (sweeten to taste) and cinnamon.
- 3Toast the breadcrumbs in a dry pan.
- 4Pre-bake the chilled dough in the tin for 15 minutes in an oven preheated to 180°C. Spread the breadcrumbs over the pre-baked crust, then top with apples, pressing them down lightly. Grate the second half of the dough over the apples using a grater with large holes. Bake for 1 hour in an oven preheated to 160°C with convection. After baking, let it cool completely in the tin.
- 5Before serving, dust with powdered sugar; you can serve it with vanilla ice cream, sour cream, or whipped cream.
