INGREDIENTS
- 350 g plain flour
- 1 teaspoon ground cinnamon
- ½ teaspoon gingerbread spice without baking powder
- 6 g instant yeast
- 50 g powdered sugar and 2 teaspoons powdered sugar
- pinch of salt
- 2 egg yolks
- 150 g butter
- 100 ml whole milk and 1 tablespoon milk
- jar of plum jam
- 30 pcs blanched almonds
INSTRUCTIONS
- 1Melt the butter, pour in the milk, and let it cool down slightly.
- 2Sift the flour and sugar and mix them with the spices, salt, and yeast. Add the egg yolk and slightly cooled butter with milk to the bowl and knead the dough. It is quite dense but elastic. Cover the bowl with a cloth and let the dough rise for one hour in a warm place without drafts.
- 3Roll out the risen dough into a 3 mm thick sheet, trying to use as little plain flour for dusting as possible and rolling it into as precise a rectangle shape as possible. Cut the sheet into 6.5 cm squares. Place a scant teaspoon of plum jam in the center of each square, fold the corners to the center. Place half an almond on the dough seam and gently press it into the dough.
- 4Place the pockets on a baking sheet lined with parchment paper, about two centimeters apart. Bake for 15 to 18 minutes in an oven preheated to 160°C with a fan. Immediately after baking, brush with egg yolk whisked with milk, rum, and a little powdered sugar. Let them dry and cool on a rack.
