INGREDIENTS

  • 1 cauliflower
  • 2 medium onions
  • 3 cloves of garlic
  • Juice of 1/2 lime
  • 1 handful of flat-leaf parsley
  • 800 g chicken breasts
  • 2 mozzarellas
  • 1 tablespoon curry powder
  • 200 ml coconut milk
  • Olive oil
  • Salt
  • Pepper

    Trim the chicken breasts and slice them horizontally. Mix olive oil with curry powder and coat the breasts on all sides with the prepared mixture. If your curry powder mixture already contains salt, do not add extra salt. Preheat the oven to 200 degrees Celsius - preferably using the grill function.

    Sear the prepared meat in a hot pan. Place it on a baking dish lined with parchment paper. Pour coconut milk over it and bake for 25-30 minutes in the oven. Slice the mozzarella and place it on top of the meat after 20 minutes. Then bake for another 5 to 10 minutes.

    Meanwhile, peel and finely chop the onion, and slice the garlic. Break the cauliflower into florets and remove the tough stems. Finely chop the florets; the result will resemble rice. Sauté the onion in 1 tablespoon of olive oil until golden, then add the garlic and let it become fragrant and soften. Add the cauliflower to the pan and sauté for about 5 minutes until tender. Season with salt and pepper. Finally, drizzle with lime juice and add chopped herbs. Serve with the roasted chicken and drizzled with the coconut pan juices.
