INGREDIENTS
- 300 g cod
- 100 g whole grain couscous
- 1 teaspoon olive oil
- 1 tablespoon sunflower oil
- 1 tomato
- 1 small zucchini
- 1 red onion
- 1 clove of garlic
- 1 fresh chili pepper
- Juice of half a lime
- Parsley
- Salt
- Pepper
INSTRUCTIONS
- 1Pour couscous into a bowl, add 200 ml of hot water and salt. Let the couscous rest under a lid.
- 2Peel the zucchini and remove the seeds; for young pieces, this step can be skipped. Cut it into smaller cubes. Also, remove the seeds and watery parts from the tomato and cut into cubes. Finely chop the onion and slice the garlic.
- 3Heat a tablespoon of oil in a pan and briefly sauté the onion with zucchini and garlic. Then mix with the couscous. Add the tomato and chopped parsley. Season with lime juice. If necessary, add more salt.
- 4Preheat the oven to 180 °C. Dry the cod, salt, and pepper it. Heat a tablespoon of oil in a pan suitable for the oven. Place the cod in the pan skin side down and fry on low heat for 4 minutes. Then place in the preheated oven and bake in the upper part of the oven for 4-5 minutes depending on the thickness of the fish.
