OMELETTE

  • 3 eggs
  • salt
  • freshly ground pepper
  • 20 g butter
  • finely chopped chives for garnish

FILLING WITH HAM AND CHEESE

  • 30 g ham
  • 30 g Cheddar, Emmental, or Gouda cheese

FILLING WITH MUSHROOMS

  • 2 medium-sized mushrooms
  • 1 teaspoon softened butter
  • salt
  • freshly ground pepper

FILLING WITH RED PEPPER

  • ½ red pepper
  • 1 small tomato

OMELETTE INSTRUCTIONS

    Crack the eggs into a bowl, add salt and pepper, pour in 1 tablespoon of water, and whisk the mixture with a fork.

    Melt the butter in a pan over low heat. It should not brown. Once the butter starts to foam slightly, pour in the egg mixture.

    Using a flat spatula, draw the mixture from the sides of the pan towards the center. Once the mixture no longer spreads across the pan but remains runny on the surface, you can evenly spread the pre-prepared filling over the forming omelette.

    Using the spatula, fold the omelette in half. Press the omelette lightly with the spatula at the fold and simultaneously towards the edge of the pan, and let it cook for 10–15 seconds. Flip the finished omelette onto a plate, sprinkle with chives, and serve immediately.

    Finely chop the ham and cheese.

    Remove the stems from the mushrooms and slice the caps into thin slices. Heat butter in a pan over medium heat and sauté the mushrooms for 1 minute, stirring constantly. Add salt and pepper.

    Remove the seeds from the pepper and finely chop it. Cut out the tough core from the tomato, remove the seeds, and finely chop the flesh.
Tip
Prepare the omelette slowly over low heat. This way, it will remain moist and fluffy.
