INGREDIENTS
- 180 g soba noodles
- 2 finely chopped shallots
- a piece of finely chopped ginger
- 2 cloves of finely chopped garlic
- 1/2 - 1 fresh chili
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 150 g tofu cut into small cubes
- 1 carrot cut into strips
- 150 g broccoli cut into smaller pieces
- mung bean sprouts or beans
- 1 chopped spring onion
- Pepper
INGREDIENTS FOR THE SAUCE
- 6 tablespoons Soy sauce
- 1 tablespoon lime juice or rice vinegar
- 1 - 2 tablespoons fish sauce (according to preference)
- 1 small teaspoon cane sugar

- Sesame
INSTRUCTIONS
- 1Cook the soba noodles according to the instructions (about 2 - 3 minutes), then drain.
- 2Heat the vegetable and sesame oil in a wok or pan.
- 3Add the shallot, ginger, garlic, and chili. Let it become fragrant.
- 4Add the broccoli, pour in half of the sauce, and cook for about 2 minutes.
- 5Add the tofu, soba noodles, carrot, and the rest of the sauce and mix.
- 6Finally, add the spring onion.
- 7Mix everything, season, pepper, and sprinkle with sesame.
