INGREDIENTS

  • 180 g soba noodles
  • 2 finely chopped shallots
  • a piece of finely chopped ginger
  • 2 cloves of finely chopped garlic
  • 1/2 - 1 fresh chili
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame oil
  • 150 g tofu cut into small cubes
  • 1 carrot cut into strips
  • 150 g broccoli cut into smaller pieces
  • mung bean sprouts or beans
  • 1 chopped spring onion
  • Pepper

INGREDIENTS FOR THE SAUCE

  • 6 tablespoons Soy sauce
  • 1 tablespoon lime juice or rice vinegar
  • 1 - 2 tablespoons fish sauce (according to preference)
  • 1 small teaspoon cane sugar

INGREDIENTS FOR GARNISH

  • Sesame

INSTRUCTIONS

    Cook the soba noodles according to the instructions (about 2 - 3 minutes), then drain.

    Heat the vegetable and sesame oil in a wok or pan.

    Add the shallot, ginger, garlic, and chili. Let it become fragrant.

    Add the broccoli, pour in half of the sauce, and cook for about 2 minutes.

    Add the tofu, soba noodles, carrot, and the rest of the sauce and mix.

    Finally, add the spring onion.

    Mix everything, season, pepper, and sprinkle with sesame.
