INGREDIENTS

  • 130 g zucchini
  • 150 g cottage cheese
  • 1 egg
  • 70 g olive oil
  • 200 g semi-skimmed milk
  • 300 g plain wheat or spelt flour
  • 2 teaspoons baking powder
  • Salt
  • 100 g ham
  • 200 g feta cheese
  • 15 g pumpkin seeds
  • 25 g grated Parmesan

  • Muffin cups

INSTRUCTIONS

    All ingredients from the fridge must be at room temperature.

    Preheat the oven to 180 degrees.

    Grate the zucchini finely, add salt, and let it sit for a while to release water.

    Cut the ham into cubes and crumble the feta.

    In one bowl, mix the flour with salt and baking powder, in another, mix the wet ingredients – cottage cheese, eggs, oil, and milk.

    Now add the liquid ingredients to the flour and mix everything thoroughly.

    Add the drained zucchini, ham, and feta.

    Line a muffin tin with paper cups. Transfer the batter into the cups.

    Sprinkle the top of each muffin with cheese and seeds.

    Bake in the oven for 40 minutes.

    After baking, let them cool completely, ideally for at least 2 hours, so the muffins can be easily separated from the cups.
