HOMEMADE BURGER BUNS
- 420 g all-purpose flour
- 1 egg and 2 egg yolks
- 135 ml sunflower oil
- Salt
- 210 ml lukewarm milk
- 35 g powdered sugar
- 35 grams fresh yeast
PULLED DUCK
- 1 whole garlic
- Salt
- Pepper
- Caraway seeds
- 1 whole duck without giblets (or 6-8 duck legs)
CARAMELIZED ONION
- 4 large red onions
- Tablespoon of oil
- 4 tablespoons balsamic vinegar
- 2 tablespoons sugar
- 1 sprig fresh rosemary
- Salt
- Pepper
PARMESAN CHIPS
- 10 tablespoons grated parmesan
HOMEMADE MAYONNAISE
- 3 fresh egg yolks
- 225 ml sunflower oil
- Juice of half a lemon
FOR FINISHING THE BURGER
- 300 g Gorgonzola cheese
- Container of arugula
INSTRUCTIONS FOR HOMEMADE BURGER BUNS
- 1First, prepare the leaven by mixing lukewarm milk, sugar, and yeast. In another bowl, sift the flour, add eggs, egg yolks, salt, and oil. Once the leaven rises, pour it into the bowl with the sifted flour.
- 2Knead the dough until it is beautifully unified and smooth. Transfer the kneaded dough into a clean bowl and let it rise.
- 3After rising, transfer the dough to a floured surface and divide it into 10 equal parts. Shape the dough into buns, ensuring the tops are as smooth as possible (to prevent cracking).
- 4Place the buns on a baking sheet lined with parchment paper, brush with egg, and sprinkle with toppings of your choice, such as sesame seeds, caraway seeds, salt... Bake in a preheated oven at 200 °C (about 15-20 minutes).
INSTRUCTIONS FOR PULLED DUCK
- 1Season the cleaned duck with salt, pepper, and caraway seeds, and place it with peeled garlic in a covered roasting pan. Roast in a preheated oven at 180-190 °C for about 3.5 hours, covered. Then remove the lid and let it roast until crispy. The meat should be easy to pull apart after roasting.
INSTRUCTIONS FOR CARAMELIZED ONION
- 1Slice the onion into strips, sauté it in oil, and add rosemary. Sauté for about 10 minutes, then add sugar. The sugar will caramelize on the onion.
- 2Add balsamic vinegar and let it evaporate. At the end, remove the rosemary and let it cool.
INSTRUCTIONS FOR PARMESAN CHIPS
- 1For the parmesan chips, you will only need grated parmesan, which you spread into 10 piles on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for about 3-5 minutes. Once melted, remove from the oven and let cool. It's good to make the cheese piles with larger gaps, as the cheese will spread.
INSTRUCTIONS FOR HOMEMADE MAYONNAISE
- 1All ingredients must be at room temperature, otherwise, they may curdle. Mix the egg yolks with lemon juice, salt, and pepper, and whisk. Gradually add oil while whisking. It's best to add it drop by drop and thoroughly incorporate each time. Once the mixture thickens, you can add the oil in larger amounts. Once all the oil is incorporated, the mayonnaise is ready.
INSTRUCTIONS FOR FINISHING THE BURGER
- 1Cut the bun in half, spread mayonnaise on both the bottom and top halves. On the bottom half, place gorgonzola, then pulled duck, arugula, caramelized onion, parmesan chips, and cover with the other half of the bun.
