  • 500 g white yogurt (3.5% fat)

INSTRUCTIONS

    Take a larger bowl. Place a sieve in it that fits just right and leaves a gap for the yogurt to drain.

    Line the sieve with a clean cloth and fill it with yogurt mixed with cream.

    Leave at room temperature until the next day. Excess water will drain into the sieve, leaving us with pure Lucina.

    The Lucina yields approximately 450 g - information important for other recipes.
