- 1 kg of small raw potatoes (cooking type A)
- 250 g of low-fat quark
- 180 g of low-fat sour cream
- 1 handful of fresh chives (finely chopped)
- 1 handful of spring onion (finely chopped)
- 2 tablespoons of melted clarified butter (optional)
- Salt

INSTRUCTIONS
- 1Clean the potatoes with a brush and wash them (do not peel!). Prepare a pot with water, bring it to a boil, then add the potatoes and cook them covered on a low flame until soft (this will take approximately 30 minutes). Meanwhile, prepare the quark mixture – in a bowl, mix quark, sour cream, chopped chives, and salt.
- 2Once the potatoes are cooked, drain the water and while still warm, mix them with the prepared quark mixture. Drizzle the potatoes with melted clarified butter, sprinkle with spring onions, and serve.
- 3The finished dish can be served warm or chilled in the refrigerator before serving.
