INGREDIENTS
- 250 g full-fat curd
- 140 g yogurt with 0% fat
- 100 g ricotta
- 1 teaspoon vanilla extract
- 30 whole grain biscuits
- 2 apples approx. 360 g
- 1 teaspoon ground cinnamon
- 20 g hazelnuts
INGREDIENTS FOR DATE CARAMEL
- 130 g Medjool dates
- 100 ml cooking cream 12%
INSTRUCTIONS
- 1Pour water over the dates and let them rest for 1 hour. Then remove the pit, place them in a chopper, and blend. Add cream and 3 tablespoons of water and blend briefly again until smooth.
- 2Preheat the oven to 180°C. Peel the apples, remove the core, and cut into smaller cubes. Sprinkle with 1 teaspoon of ground cinnamon, mix, spread on a baking sheet lined with parchment paper, and bake for 15 minutes.
- 3Crush the biscuits. For the cream, mix curd, yogurt, ricotta, and vanilla extract.
- 4Place part of the cream at the bottom of the jar. Sprinkle with crushed biscuits, pour over date caramel, and top with some baked apples. For the next layer, use the remaining cream, date caramel, and baked apples. Finally, sprinkle the entire dessert with chopped hazelnuts.
