INGREDIENTS

  • 650 g chicken breasts
  • 100 g corn breadcrumbs
  • 1 teaspoon curry powder
  • ½ teaspoon ground coriander
  • 1 handful coarsely chopped fresh coriander (optional)
  • 20 g black sesame seeds (or white)
  • 2 tablespoons light miso paste
  • 2 tablespoons soy sauce
  • 1 clove garlic (crushed)
  • 1 tablespoon olive oil
  • Pepper

  • Baking paper
  • Ground chili

INSTRUCTIONS

    First, preheat the oven to 185–190 °C, prepare a baking tray (30 cm × 40 cm) and line it with baking paper.

    Wash, clean, and cut the chicken breasts lengthwise in half. Then season the meat with pepper, but do not salt, as the individual ingredients are quite salty.

    Now prepare 2 bowls. In one, place the corn breadcrumbs, curry powder, ground coriander, fresh coriander, and black sesame seeds and mix. In the second bowl, put the miso paste, soy sauce, garlic, oil, and pepper and mix.

    Then coat the prepared chicken schnitzels with the miso paste mixture and then coat them in the corn breadcrumb mixture. Place the finished schnitzel on the prepared baking tray and repeat the process until you have used up the rest of the meat.

    Then place the tray with the schnitzels in the preheated oven and bake for 25–28 minutes at 185–190 °C. Serve after baking.
Tip
If you like spicier dishes, we recommend adding chili to the coating mixture.
