INGREDIENTS

  • 150 g whole grain spelt flour
  • 70 g oat flour (finely ground oat flakes)
  • 30 g cane sugar
  • 30 g Dutch cocoa
  • 100 g ground walnuts
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves (optional)
  • 100 g butter (room temperature, cut into cubes)
  • 50 g honey
  • 70 ml semi-skimmed milk
  • 1 egg size M

INSTRUCTIONS

    First, prepare the dough: In a medium-sized bowl, combine the dry ingredients – both flours, sugar, cocoa, nuts, cinnamon, and cloves. Mix everything together and add the butter, honey, milk, and egg. Mix again and knead into a firmer dough with your hands. Wrap the finished dough in cling film and let it rest overnight in the fridge (if you're in a hurry, let it rest in the fridge for at least an hour).

    Take the rested dough out of the fridge, preheat the oven to 170 °C, and prepare the molds.

    Break off pieces of the softened dough with your fingers (about 10 g per mold) and fill the bear paw molds so that the dough has a small indentation in the center and slightly higher edges. Place the filled molds in the preheated oven and bake for 10–15 minutes at 165–170 °C (smaller bear paws will take less time, larger ones more).

    Let the baked bear paws cool in the molds for about 10 minutes and allow them to cool completely before consumption.
Tip
Before serving, coat the bear paws in powdered cane sugar to make them look like the classic ones. If you choose this option, please remove the sugar from the recipe to prevent the bear paws from being too sweet.
