INGREDIENTS
- 140 g plain flour
- 100 g chilled butter
- 30 g Cheddar cheese
- 1 tablespoon ground turmeric
- 1 tablespoon coarsely chopped fresh herbs (rosemary, thyme, oregano)
- a pinch of salt
INSTRUCTIONS
- 1Grate the Cheddar finely and mix it with all the remaining ingredients. Work the dough into a roll with a diameter of 3.5 cm. Wrap it in cling film and place it in the freezer for 30 minutes.
- 2Cut the chilled dough into slices about 0.5 cm thick. Place them at small intervals on a baking sheet lined with parchment paper. You can create decorative crosshatching on the cookies with the tines of a fork. Bake for 15 minutes in an oven preheated to 160°C with fan. After baking, let them cool on the baking sheet.
Tip
They are best after a few days of resting. In a sealed container, they last at least 14 days, but we've never actually managed to test that :-).
