INGREDIENTS

  • 200 g plain flour
  • 75 g whole wheat flour
  • 200 g softened butter
  • 60 g powdered sugar
  • ½ teaspoon ground cinnamon

INSTRUCTIONS

  • 1
Sift the flour together with cinnamon and sugar, add butter and work everything into a smooth sticky dough. Form a ball, wrap it in cling film and let it cool in the refrigerator for at least two hours, or even overnight.
  • 2
Lightly work the chilled dough in your hands on a board and roll it out to a thickness of 5 mm. If you have a decorative rolling pin, you can use it at the end. Cut out circles with a diameter of 6 cm. If you don't have a decorative rolling pin but have a cookie stamp, you can use that; the dough will hold the pattern after baking. Place the circles on a baking sheet lined with parchment paper, leaving small gaps between them.
  • 3
Bake in an oven preheated to 180°C for about 10 minutes. After baking, let the cookies rest on the baking sheet for another 5 minutes, then transfer them to a rack to cool.
