INGREDIENTS
- 300 g zucchini
- 200 g blanched almonds
- 3 eggs
- 3 teaspoons coconut oil
- ½ packet baking powder
- Clove of garlic
- 1 teaspoon Herbes de Provence
- 2 pinches of salt
- Almond slices for decoration
YOU WILL ALSO NEED
- Baking paper
INSTRUCTIONS
- 1Wash the zucchini and grate it finely. Squeeze out as much water as possible. Grind the almonds into flour and add to the zucchini. Then crack 3 eggs, add coconut oil, baking powder, garlic, herbs, and 2 pinches of salt. Mix together to form a more liquid batter.
- 2Pour it into a loaf pan lined with baking paper. Place in a preheated oven at 180°C. Bake for 45 minutes until the bread is lightly golden.
