INGREDIENTS
- 125 g quark in paper packaging
- 70 g butter
- 1 egg
- 1 teaspoon vanilla extract
- 65 g brown cane sugar
- 200 g whole wheat flour
- 1 baking powder
- Grated zest from half a lemon
- 50 g dried plums
- 50 g dried apricots
- 50 g hazelnuts

- 1 tablespoon powdered sugar
- 30 g butter

INSTRUCTIONS
- 1In a bowl, whisk together the quark, butter, eggs, vanilla, and sugar. Add the flour, baking powder, and lemon zest. Chop the dried fruit into smaller pieces and chop the nuts. Add to the dough and mix. Finally, transfer the dough to a board, lightly dust with flour, and knead a few more times by hand. Roll the dough out to a 3 cm thick sheet, fold it along the longer side, and place it in ¾ to create the classic stollen shape.
- 2Preheat the oven to 180 °C. Transfer the stollen to a baking sheet lined with parchment paper and bake for 20 minutes. Then reduce the temperature to 150 °C and bake for another 15 minutes.
- 3After removing from the oven, brush with melted butter and sprinkle with powdered sugar.
Tip
As an alternative to regular sugar, powdered cane sugar or powdered stevia can be used.
