INGREDIENTS
- 200 g smooth buckwheat flour
- 80 g powdered brown cane sugar
- 80 g butter
- 2 eggs
- 60 g 70% chocolate
- 20 g Dutch cocoa
- Pecans

INSTRUCTIONS
- 1Take the butter and eggs out of the fridge an hour in advance.
- 2Melt the chocolate in a water bath and let it cool so it is not hot but remains liquid. Sift 180 g of flour into a bowl, add sugar, softened butter, eggs, cocoa, and melted chocolate. Mix until all ingredients are combined. Transfer to a board, sprinkle with 20 g of flour, and knead the dough by hand. Wrap the dough in cling film and let it rest in the fridge for 1 hour.
- 3Take 15 g pieces of dough and form balls, placing them on a baking sheet lined with parchment paper. Place a pecan on each ball and gently press down.
- 4Preheat the oven to 160 °C. Bake the buns for approximately 15 minutes.
