INGREDIENTS
- Approx. 470 g carp fillet with skin
- 2 teaspoons of tomato paste
- 2 teaspoons of French mustard
- 2 spring onions
- 1 tablespoon of capers in sweet and sour brine
- 2 sprigs of fresh thyme
- 2 tablespoons of lime juice
- 1 teaspoon of olive oil
- Salt
- Pepper
INGREDIENTS FOR FINISHING
- Toast bread
- Chili flakes for sprinkling - optional
INSTRUCTIONS
- 1Remove the skin from the carp fillet, thoroughly remove all bones, and cut the meat into very fine cubes. Then, using the flat side of a knife, mash the meat into tartare.
- 2Mix the meat with tomato paste, mustard, olive oil, and lime juice. Mix together. Finely chop the thyme, spring onion, and capers. Mix with the carp. Season with salt and pepper, and chill in the refrigerator.
- 3Serve the tartare with freshly toasted bread and sprinkle with chili flakes.
