INGREDIENTS
- 300 g shredded coconut
- 3 tablespoons honey
- 80 g coconut oil (melted)
- 30 g butter
- 150 g quality dark chocolate (min. 70% cocoa)*
YOU WILL ALSO NEED
- Cling film
INSTRUCTIONS
- 1In a large bowl, thoroughly mix the shredded coconut with honey and coconut oil.
- 2Prepare a higher square container (20 cm × 20 cm) and line it with cling film. Pack the prepared coconut mixture into the container and press the mixture down with your palm.
- 3Then place the container with the coconut mixture in the freezer for at least 30 minutes.
- 4Meanwhile, melt the dark chocolate with butter over a water bath. Prepare a pot and a bowl that can be inserted into the pot without touching its bottom. Pour a small amount of water into the pot and heat it so that the water is gently boiling. Break the chocolate into the bowl and add the butter. Once the water in the pot starts to boil, reduce the heat to a low setting, carefully insert the bowl into the pot, and let the chocolate and butter melt slowly while stirring constantly.
- 5Remove the container with the coconut mixture from the freezer and cut the mixture into rectangles (4 cm × 20 cm). Coat each piece in the melted chocolate and let it drip off (preferably on a baking rack). Then place the coated pieces in the refrigerator for 20 minutes.
- 6Take the chilled coconut bars out of the refrigerator and serve. Stored in the refrigerator, they will last about 5–7 days.
Tip
*For easier coating of the bars, melt more
chocolate.
