INGREDIENTS

  • 400 g whole grain spelt flour
  • 100 g honey
  • 7 g baking powder
  • 150 g butter (room temperature)
  • 500 g semi-skimmed curd
  • 3 eggs
  • Zest of 1 lemon
  • 200 g fresh blueberries (frozen can be used)
  • 20 g finely ground oats (oat flour)

INSTRUCTIONS

    First, preheat the oven to 170–175 °C and prepare a baking dish (21 cm × 21 cm).

    Meanwhile, in a larger bowl, mix the flour with honey, baking powder, and butter at room temperature. The resulting dough should resemble classic crumble for cakes. Pour ¾ of the dough into the prepared baking dish and press it down with your hand.

    For the preparation of the curd part of the cake, mix the curd, eggs, and zest of 1 lemon in a larger bowl. Mix until smooth and then pour the resulting cream over the smoothed dough in the baking dish.

    Next, add the blueberries on top of the curd cream. Add finely ground oats to the remaining ¼ of the dough, mix lightly, and sprinkle the resulting mixture over the surface of the cake to create a crumble.

    Place the prepared cake in the preheated oven at 170–175 °C and bake for 45–50 minutes.

    Let the baked cake cool for at least 40 minutes. After cooling, cut the cake into individual portions and serve.
Tip
You can replace the blueberries with other fruits. The cake will taste great with strawberries, raspberries, or currants.
