INGREDIENTS
- 400 g kale
- 1 Red Moon apple with red flesh
- 1 pomegranate
- Approx. 70 g pecans
- 2 tablespoons brown sugar
- 180 g goat cheese with mold
- 3 tablespoons red wine vinegar
- 1 teaspoon honey
- 1 teaspoon French mustard
- 1 tablespoon olive oil
- Freshly ground black pepper
- Salt
INSTRUCTIONS
- 1Wash the kale, remove the tough stems, and cut into smaller pieces. Blanch in salted boiling water for about 1 minute, then immediately place under cold water or in a bowl with water and ice to stop the cooking process inside the kale.
- 2Prepare the dressing - mix red wine vinegar, honey, olive oil, and mustard. Season with salt and pepper.
- 3Core the apple and cut into cubes. Remove the seeds from the pomegranate and cut the goat cheese into smaller pieces. Quickly roast the nuts with brown sugar in a pan. Once the sugar melts and coats the nuts, set aside. Be careful not to let the sugar burn and become bitter.
- 4Mix the kale with the dressing and spread on a plate along with the chopped apple, pomegranate seeds, caramelized nuts, and goat cheese.
