INGREDIENTS

  • 6 eggs
  • 220 g granulated sugar
  • 250 g semi-coarse flour
  • 50 g grated coconut + for dusting the pan
  • 50 g coarsely ground blanched almonds
  • 1 teaspoon baking powder
  • 200 ml coconut milk
  • A pinch of salt
  • Sunflower oil
  • Powdered sugar

INSTRUCTIONS

    Grease the bundt cake pan with oil and dust with grated coconut.

    Mix the flour with coconut, almonds, and baking powder. Separate the eggs into whites and yolks. Add a pinch of salt to the whites and beat them into stiff peaks, gradually whisking in the granulated sugar by spoonfuls, followed by the yolks one at a time.

    Finally, gently fold the coconut milk and dry ingredients into the batter. Pour the batter into the pan and bake for 45 minutes in an oven preheated to 175°C. To check if the cake is done, insert a skewer into the cake; if it comes out clean, the cake is baked.

    Let the cake cool in the pan on a rack for 10 minutes, then carefully turn it out onto the rack and let it cool completely.

    Dust with powdered sugar before serving.
