INGREDIENTS

  • 25 g butter
  • 1 onion (60 g)
  • 2 cloves of garlic
  • 50 g wheat flour
  • 850 ml chicken broth
  • 150 g cheddar
  • 1 pack of fresh broccoli (500 g)
  • 100 g fresh spinach
  • 250 g cooking cream 15-16%
  • Pepper
  • Salt
  • 500 ml whole milk

INSTRUCTIONS

    Clean and finely chop the onion and garlic. Wash the broccoli, cut off the florets, and clean the stalk. Rinse the spinach and finely grate the cheddar.

    Melt the butter in a pot and sauté the onion and garlic in it. Then add the flour and cook briefly.

    Now pour in the broth and milk, add the broccoli stalks, and let it simmer for 10 minutes, stirring occasionally.

    Remove the stalks, add the broccoli florets and cheddar, and simmer again.

    Finally, add the spinach and cream, simmer for another 5 minutes, and blend everything until smooth.

    Season with salt and pepper to taste.

    Serve with croutons and grated cheddar.
