DOUGH

  • 75 g all-purpose flour
  • 45 g butter
  • small pinch of salt
  • 1 tablespoon powdered sugar

PLUM FILLING

  • 8 tablespoons thick plum jam
  • 2 cloves
  • piece of star anise
  • 2 tablespoons milk
  • 2 tablespoons granulated sugar

    Mix the sifted flour and sugar with salt, add chilled butter cut into small pieces, and quickly work the dough to resemble crumbs. Add 1 to 2 tablespoons of ice water to the dough, mixing with a fork each time until a smooth dough forms. Work quickly to prevent the butter from softening too much, which will make the final dough more delicate.

    Wrap the dough in plastic wrap and chill in the refrigerator for 2 hours.

    Grind or crush the cloves and star anise in a mortar and mix them with the plum jam.

PIE INSTRUCTIONS

    Roll out the prepared dough into a thin sheet, cut out circles or other shapes with a diameter of 6 cm. Cut a decorative center out of half of the circles. Place a piece of stick on the bottom full circle so that its end reaches the center of the circle and gently press it into the dough. Place less than a teaspoon of plum jam in the center of the circle and cover it with the circle with the cut-out center. Press the edges well, create a decorative edge with a stick or toothpick, and place the pie on a baking sheet lined with parchment paper. Brush with milk and sprinkle with a little granulated sugar.

    Bake for 15 to 20 minutes in an oven preheated to 200°C. Let cool on the baking sheet after baking.
Tip
For preparation, you will need 6 wooden sticks cut in half.
