INGREDIENTS
- 40 g dried raisins
- 200 g apple
- 100 g carrot
- 150 g spelt flour
- 80 g ground oats
- Teaspoon of ground cinnamon
- Teaspoon of baking powder
- 2 pcs eggs
- 130 g ripe banana
- 60 ml rapeseed oil
- Pinch of salt
- 150 g full-fat white yogurt

INSTRUCTIONS
- 1First, pour boiling water over the raisins and let them soak. Preheat the oven to 180°C.
- 2Grate the cleaned carrot and apple with the skin finely.
- 3Mix the flour, ground oats, cinnamon, and baking powder in a bowl.
- 4Separate the egg white from the yolk and in another bowl, blend the separated yolks, banana, yogurt, and oil using a hand blender. Pour the liquid mixture into the dry ingredients and mix everything together.
- 5Add a pinch of salt to the egg whites and whisk them into stiff peaks in a tall container. Then gently fold them into the batter. Fill either silicone or paper muffin cups with the finished batter, which you have placed in a muffin tray beforehand.
- 6Drain the water from the raisins and chop them into smaller pieces. Add them to the batter along with the grated carrot and apple and mix.
- 7Bake for 30-35 minutes at 180°C until golden brown.
