INGREDIENTS

  • 40 g dried raisins
  • 200 g apple
  • 100 g carrot
  • 150 g spelt flour
  • 80 g ground oats
  • Teaspoon of ground cinnamon
  • Teaspoon of baking powder
  • 2 pcs eggs
  • 130 g ripe banana
  • 60 ml rapeseed oil
  • Pinch of salt
  • 150 g full-fat white yogurt

INSTRUCTIONS

    First, pour boiling water over the raisins and let them soak. Preheat the oven to 180°C.

    Grate the cleaned carrot and apple with the skin finely.

    Mix the flour, ground oats, cinnamon, and baking powder in a bowl.

    Separate the egg white from the yolk and in another bowl, blend the separated yolks, banana, yogurt, and oil using a hand blender. Pour the liquid mixture into the dry ingredients and mix everything together.

    Add a pinch of salt to the egg whites and whisk them into stiff peaks in a tall container. Then gently fold them into the batter. Fill either silicone or paper muffin cups with the finished batter, which you have placed in a muffin tray beforehand.

    Drain the water from the raisins and chop them into smaller pieces. Add them to the batter along with the grated carrot and apple and mix.

    Bake for 30-35 minutes at 180°C until golden brown.
