INGREDIENTS FOR THE FISH
- 4 halibut fillets (150 g)
- 1 tablespoon lemon juice
- 150 g frozen peas
- 3 cloves of garlic
- 1 tablespoon olive oil
- 2 tablespoons butter
- Pea shoots
- Salt
- Pepper
INGREDIENTS FOR THE PESTO
- 150 g frozen peas
- 50 g grated Parmesan
- 50 g olive oil
- 2 cloves of garlic
- 1 handful fresh basil
- 10 mint leaves
- 1 tablespoon lemon juice
- Salt
INSTRUCTIONS
- 1First, prepare the pesto. Allow the peas to thaw to room temperature. In a tall container, mix the peas, Parmesan, crushed garlic, herbs, and olive oil. Blend with an immersion blender until smooth. Stir in the lemon juice and salt to taste if necessary. Set aside.
- 2Season the fish with salt, pepper, and drizzle with lemon juice. Heat 1 tablespoon of oil and 1 tablespoon of butter in a pan. Sauté the halibut until golden brown, about 3 - 4 minutes on each side. Remove from the stove, place a spoonful of pea pesto on each fillet, and let the pesto melt under a lid.
- 3Peel and slice the remaining garlic. Sauté the garlic in 1 tablespoon of butter until golden, add the peas, and quickly sauté for just a few minutes. The peas should remain firm and bright green. Season with salt and pepper.
- 4Serve the halibut with pesto alongside the sautéed peas and sprinkle with pea shoots.
