  • Pack of udon noodles
  • Spring onion
  • Vegetable oil
  • 200-300 g fresh mushrooms
  • Garlic
  • Ginger
  • Brown cane sugar
  • Soy sauce
  • Rice vinegar

    In a hot wok, sauté the sliced and cleaned mushrooms in oil until golden brown.

    Meanwhile, cook the udon noodles for 3 minutes, rinse and drain. (Tip: cook in unsalted water, using ten times the amount of water compared to noodles, and ensure a vigorous boil)

    Add finely chopped garlic and ginger to the mushrooms, add a tablespoon of sugar, two tablespoons of soy sauce. Then add the spring onion cut into larger pieces and sauté everything together for another minute.

    Add the cooked noodles, soy sauce, and toss to mix all the ingredients well.

    Remove from heat, garnish, and serve.
Tip
If dry, add a little broth.
