INGREDIENTS

  • 250 g raw broccoli
  • 1 medium white onion
  • 300 g turkey breast
  • 200 g whole grain couscous in dry state
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 2 cloves garlic (pressed)
  • 250 ml soy cream (can be replaced with rice or 12% cow's cream)
  • Salt
  • Pepper

INSTRUCTIONS

    Wash the broccoli, clean it, and divide it into florets. Peel the onion and chop it finely. Cut the turkey breast into strips.

    Bring water to a boil in a pot, then add the broccoli and let it cook for about 5 minutes over medium heat. After cooking, drain the broccoli and set it aside.

    Now prepare the couscous according to the instructions on the package – pour boiling water over it in the prescribed ratio (usually 1.6–2 parts water to 1 part couscous), cover, and let it stand for approximately 10–15 minutes until all the hot water is absorbed into the couscous.

    While the couscous is cooking, prepare the turkey mix. Heat 1 tablespoon of olive oil in a pan, add the chopped onion, and sauté for about 2 minutes over medium heat. Then add the sliced turkey breast, salt, pepper, and dried thyme to the pan and sauté for another 7 minutes; in the 6th minute, add the pressed garlic to the mix and gently sauté it during the remaining 1 minute to release its aroma. Then pour in the soy cream, add the cooked broccoli to the pan, and let the whole mixture heat for another 3 minutes.

    Serve the finished turkey mix with the cooked couscous.
