- 400 g brown mushrooms
- 3 tablespoons olive oil
- 15 g butter
- 50 g white onion (finely chopped)
- 1 handful fresh flat-leaf parsley (optional)
- 1 teaspoon dried thyme
- 4 eggs size M
- 50 g Parmesan
- Salt
- Pepper

INSTRUCTIONS
- 1First, preheat the oven to 185–190 °C and prepare a pan suitable for the oven.
- 2Cut the mushrooms into larger pieces (about 2 cm). Then heat a pan with olive oil and butter over medium heat. Once the oil is hot, add the onion and mushrooms to the pan and sauté both for 6–7 minutes over medium heat. Meanwhile, finely chop the parsley. After the specified time, add it to the pan along with thyme, salt, and pepper, stir, and turn off the heat.
- 3Next, crack the eggs into the pan and sprinkle everything with Parmesan. Place the entire pan in the preheated oven and bake for 4–5 minutes at 185–190 °C. Then serve.
