INGREDIENTS
- 200 g whole grain spelt flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon (optional)
- 30 g honey
- 250 ml semi-skimmed milk (can be replaced with any plant-based milk)
- 2 eggs size M
- 30 g coconut oil in liquid state
- 100 g fresh strawberries sliced (can use frozen)
- 100 g fresh blueberries (can use frozen)
SERVING TIP
- Serve with plain yogurt (3.5% fat).
INSTRUCTIONS
- 1First, preheat the oven to 210 °C, prepare a baking pan (20 cm × 20 cm) and line it with baking paper.
- 2In a medium-sized bowl, combine the flour, baking powder, and cinnamon and mix. Then add honey, milk, eggs, and oil and whisk into a smooth batter. Pour the finished batter into the prepared baking pan and top with strawberries and blueberries.
- 3Bake in the preheated oven for 15–20 minutes at 200–210 °C. Let it rest for 10 minutes before serving.
Tip
Serve with plain yogurt
(3.5% fat).
