INGREDIENTS

  • 1 cauliflower
  • 2 medium onions
  • 3 cloves of garlic
  • Juice of 1/2 lime
  • 1 handful of flat-leaf parsley
  • 800 g chicken breasts
  • 2 mozzarellas
  • 1 tablespoon curry powder
  • 200 ml coconut milk
  • Olive oil
  • Salt
  • Pepper

INSTRUCTIONS

    Trim the chicken breasts and cut them horizontally. Mix olive oil with curry powder and coat the breasts on all sides with the prepared mixture. If the curry powder mix includes salt, do not add more salt. Preheat the oven to 200 degrees - preferably with the grill function.

    Sear the prepared meat on a hot pan. Place it on a baking sheet lined with parchment paper. Pour coconut milk over it and bake in the oven for 25-30 minutes. Slice the mozzarella and place it on the meat after 20 minutes. Then bake for another 5 to 10 minutes.

    Meanwhile, peel and finely chop the onion, slice the garlic. Break the cauliflower into florets and remove the tough stems. Chop the florets finely, resembling rice. Sauté the onion in 1 tablespoon of olive oil until golden, then add the garlic and let it become fragrant and soft. Add the cauliflower to the pan and sauté for about 5 minutes until soft. Season with salt and pepper. Finally, drizzle with lime juice and add chopped herbs. Serve with the baked chicken and pour over with coconut drippings.
