INGREDIENTS
- 2 l of beef broth
- 1 parsnip sliced
- 2 carrots
- 2 onions
- 600 g of beef tripe
- 4 egg yolks
- 1 sour cream
- 3 cloves of garlic
- Salt
- Pepper
INSTRUCTIONS
- 1Pour the beef broth into a pot.
- 2Bring to a boil and add sliced parsnip, carrot, and onion. Cook for 25 minutes.
- 3Then remove the vegetables.
- 4Add the beef tripe and cook for 25 minutes.
- 5Whisk the egg yolks with sour cream. Add crushed garlic and 1/2 of the tripe broth.
- 6Blend the mixture until smooth and slowly pour it into the broth while stirring constantly.
- 7Finally, season the soup with salt and pepper, and add the already cooked vegetables.
