INGREDIENTS
- 500 g penne pasta
- 800 g chopped canned tomatoes
- 1 chili pepper
- 100 g lean English bacon
- 6 cloves of garlic
- 4 small shallots
- 1 tablespoon olive oil
- 1 handful fresh basil
- Salt
- Pepper
- Chopped parsley
- 100 g Parmesan-type cheese - optional
INSTRUCTIONS
- 1Cook the pasta according to the instructions. Meanwhile, fry the diced bacon in a pan. Add the chopped chili pepper, and don't be stingy with it. Then add finely chopped shallots. Once the shallots are golden, add sliced garlic.
- 2Add chopped tomatoes to the mixture, season with salt and pepper. Add a few basil leaves, cover with a lid, and let it reduce for about 5 - 7 minutes on a low flame.
- 3Once the pasta is cooked, mix it with the tomato mixture. Serve with chopped fresh parsley and grated Parmesan cheese is also a great addition.
