  • 4 large sweet potatoes
  • Bunch of kale (approx. 200 g)
  • 1 package of feta cheese
  • 2 tablespoons of olive oil
  • Salt
  • Pepper

INSTRUCTIONS

    Thoroughly wash the sweet potatoes in warm water and dry them. Poke each one with a fork in several places and place them on a baking sheet or dish lined with parchment paper. Bake the sweet potatoes at 200°C until soft – this takes approximately 45 minutes.

    Meanwhile, chop the kale into small pieces and mash the feta with a fork. Transfer everything to a large bowl and mix together with 2 tablespoons of olive oil.

    Remove the finished sweet potatoes from the oven and make a cut on the top of each one so you can easily scoop out the flesh. Add the scooped-out flesh to the bowl with the feta and kale, season with salt and pepper, and mix together.

    Fill the scooped-out sweet potato skins with the resulting mixture and bake again for about 10 minutes.
