INGREDIENTS

  • 500 g of peas (fresh or frozen)
  • 1 onion
  • 1 piece of leek (only the white part)
  • 1 cm of fresh ginger
  • 600 ml of vegetable broth
  • 1 teaspoon of salt
  • 1 tablespoon of oil
  • Radish microgreens
  • Almonds for serving

INSTRUCTIONS

    Chop the onion finely and slice the leek into rings. Peel the ginger and chop it finely as well. Sauté the vegetables in a tablespoon of oil until translucent. Add the peas, broth, and cook for 10 minutes on low heat.

    Pour the soup into a blender and blend until smooth. Season with salt.

    Serve with microgreens and sprinkle with small pieces of nuts.
