INGREDIENTS
- 2 tablespoons olive oil
- 4 chicken breasts (cut into pieces)
- 1 large yellow onion (diced)
- 3 dried bay leaves
- 5 g fresh thyme
- 1 teaspoon dried oregano
- 10 g fresh parsley (finely chopped)
- 3 cloves garlic (roughly chopped)
- Chopped tomatoes from 2 cans (2× 400 g)
- 1 tablespoon granulated cane sugar
- 1 package whole grain gnocchi, dry (500 g)
- 40 g Parmesan (finely grated)
- Salt
- Pepper

INSTRUCTIONS
- 1In a large pan, heat the oil over low heat. Then increase the heat to medium-high, add the chicken breasts and sauté for 7–8 minutes until the meat is seared. Then reduce the heat to medium, remove the chicken from the pan, add the onion and sauté for 5–6 minutes. Then add the bay leaves, thyme, oregano, parsley, and garlic. Sauté for 1–2 minutes and then pour in the tomatoes. Do not discard the cans, fill them with water and pour it into the pan.
- 2Cook the tomato mixture for about 15 minutes over high heat. Then reduce the heat to medium, add the chicken and sugar, and cook for another 5 minutes. Then add the gnocchi, Parmesan, salt, and pepper and cook for 8–10 minutes (or according to the time indicated on the package), stirring occasionally to prevent the gnocchi from sticking to the bottom of the pot.
Tip
Before serving, sprinkle with finely chopped fresh basil.
