INGREDIENTS
- 3 eggs
- 80 g brown sugar
- 110 ml milk
- 110 g yogurt
- 150 g whole wheat spelt flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 20 g cocoa
- 40 g melted butter + butter for greasing the mold
- Coarse flour for dusting the mold
- Pinch of salt
INSTRUCTIONS
- 1Grease the bundt cake pan with butter and dust with coarse flour. If you have a silicone mold, skip this step.
- 2Preheat the oven to 170 °C.
- 3Separate the eggs into whites and yolks. Whip the egg whites with a pinch of salt until stiff peaks form. Beat the yolks with sugar until light and fluffy. Add milk and yogurt and beat again.
- 4Sift the flour with baking powder, baking soda, and cocoa, and mix with the wet mixture. Pour in the melted butter and mix again. Finally, fold in the whipped egg whites. Do not beat the batter anymore, just gently fold with a spatula.
- 5Pour the batter into the mold and bake for 35-40 minutes. Check the doneness of the cake with a skewer. If the skewer comes out with batter stuck to it, extend the baking time by 5 minutes.
- 6After a minute, turn the baked cake out onto a wire rack and let it cool.
