INGREDIENTS

  • 400 g potatoes
  • 4 eggs
  • 25 g wild garlic (half a bunch)
  • A handful of flat-leaf parsley
  • 1 red onion
  • 1 tablespoon sunflower oil
  • Salt
  • Freshly ground pepper
  • 20 g Grana Padano or Gran Moravia cheese

SIDE DISH

  • Mixed salad leaves
  • Lemon juice

INSTRUCTIONS

    Wash the potatoes and boil them in their skins over low heat until soft. Peel the cooked potatoes, cut them into thicker slices, and lightly salt them.

    Chop the onion finely and cut the wild garlic into larger pieces. Pick the parsley leaves and chop them finely. Crack the eggs into a bowl, add salt, freshly ground pepper, and whisk.

    Pour oil into a medium-sized pan and fry the onion. Add the potatoes and fry them for a while, stirring occasionally. Add the wild garlic and parsley. Once the herbs wilt, pour in the eggs and cover with a lid. Fry for several minutes until the eggs are cooked on the surface. Alternatively, you can flip the omelette using a plate and fry the other side. Once the tortilla is done, sprinkle with grated cheese.

    Serve with a salad drizzled with lemon juice.
