
White asparagus baked with Parma ham and herb butter

Preparation method
Preheat the oven to 220 degrees. Grate the zest from the lemon and squeeze the juice from half of it. In a bowl, mix the softened butter, herbs, crushed garlic, lemon juice, and zest from half of the lemon. Season with salt to taste and chill in the refrigerator.
Peel the asparagus with a potato peeler and trim off the woody ends. Boil in salted water for 5 - 8 minutes, depending on the thickness of the asparagus. After cooking, immediately cool in ice water to stop the cooking process.
Wrap the asparagus in Parma ham and place it in a baking dish. Season with pepper, sprinkle with Parmesan, and the other half of the lemon zest. Top with herb butter and bake in the oven for 15 minutes.
Chef's tip
The dish is excellent on its own, or serve it with bread or boiled potatoes as a main course. If it's wild garlic season, don't hesitate to add it to the butter – about 1 teaspoon, chopped. Herb butter with wild garlic will get that right kick.
