INGREDIENTS FOR THE DISH

  • 1 package of Phở noodles
  • 3 eggs
  • 3 finely chopped shallots
  • 4 cloves of finely chopped garlic
  • 1 chopped fresh chili pepper
  • 200 g of beef sirloin
  • 2 carrots cut into thin strips
  • A handful of chopped spring onion
  • A handful of mung bean sprouts
  • A handful of chopped coriander
  • 100 g of crushed peanuts
  • 1 lime
  • 4 tablespoons of vegetable oil

INGREDIENTS FOR THE SAUCE

  • 12 tablespoons of tamarind paste
  • 12 tablespoons of brown sugar
  • 12 tablespoons of fish sauce
  • 12 tablespoons of oyster sauce

INSTRUCTIONS

    Soak the noodles in lukewarm water for half an hour, then drain to remove excess water. Slice the beef sirloin into thin strips. Prepare the sauce by mixing all the ingredients.

    Heat oil in a wok or pan, add chopped garlic, shallots, and chili. Let the mixture become fragrant, then crack the eggs and stir. After a minute, add the beef sirloin slices and stir-fry. Add the rice noodles, then the sliced vegetables (carrot, mung bean sprouts, spring onion), and pour over the prepared sauce. Stir-fry until the noodles are tender (about 3-4 minutes).

    Finally, sprinkle the noodles with coriander, peanuts, and a squeeze of lime.
