INGREDIENTS FOR SEA BREAM

  • 1 sea bream weighing approximately 450 g
  • 1 bunch of herbs for fish
  • 1 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon salt

SIDE DISH

  • 400 - 500 g potatoes
  • 50 - 100 ml milk
  • 20 g basil leaves (2 handfuls)
  • 40 g Grana Padano
  • 40 ml olive oil
  • 20 g sunflower seeds

INSTRUCTIONS

    Preheat the oven to 200 °C. Prepare a piece of baking paper approximately 50x50 cm in size.

    Wash the fish and pat it dry with a paper towel. Salt it on the surface and inside. Slice the lemon and place it along with the herbs into the abdominal cavity. Place the fish on the baking paper, drizzle with olive oil, and wrap it thoroughly.

    Bake for 25-30 minutes depending on the size of the sea bream.

    For the pesto, place basil leaves, grated cheese, olive oil, and sunflower seeds into a blender with a chopper. Blend everything together until as smooth as possible.

    Peel the potatoes, cut them into pieces, and cook them in salted water until soft. Drain the water and mash the potatoes. Add basil pesto, milk, and mix. If necessary, season with salt.

You can also prepare the sea bream en papillote on the grill.
