INGREDIENTS FOR THE DOUGH
- 3 young zucchinis (approx. 800 g)
- 2 eggs
- 70 g grated Parmesan-type cheese
- 1 clove of garlic
- 1 teaspoon dried oregano
- Salt
- Pepper
INGREDIENTS FOR THE TOMATO SAUCE
- 200 g chopped canned tomatoes
- 1 small onion
- A few leaves of fresh basil
- 1 teaspoon olive oil
- Salt
- Pepper
INGREDIENTS FOR FINISHING
- 125 g mozzarella
- 5 cherry tomatoes
- 1/2 small yellow pepper
- A few leaves of fresh basil
INSTRUCTIONS
- 1Preheat the oven to 200 degrees Celsius - bottom and top heat. Wash the zucchinis and cut off the ends. Grate them finely. Salt and thoroughly squeeze out all the water. You can squeeze in small portions in your hands or strain through a cloth. Add eggs, crushed garlic, oregano, and cheese. Pepper and mix everything together. Line a baking sheet with parchment paper and form a flat circle with a diameter of 25 cm. Bake for 20 minutes.
- 2In the meantime, prepare the tomato sauce. Finely chop the onion and sauté in olive oil until golden. Add crushed tomatoes, salt, and pepper. Reduce for about 10 minutes. Then blend everything and add torn basil leaves.
- 3After 20 minutes of baking, a firm and golden dough will form. At this point, spread the tomato mixture on it, layer with slices of mozzarella, tomatoes, and strips of pepper. Bake for another 15 minutes. Serve with fresh basil.
