INGREDIENTS
- 200 g fresh rhubarb
- 100 g granulated sugar
- 1 teaspoon ground cinnamon
INGREDIENTS FOR THE BATTER
- 300 g whole wheat plain flour
- 100 g granulated sugar
- 70 g rapeseed oil
- 1 egg
- Finely grated zest of an organic lemon
- 250 g kefir
- Salt
- 1 teaspoon ground vanilla
- ½ teaspoon baking soda
- ½ teaspoon baking powder
INSTRUCTIONS
- 1Wash the rhubarb, peel it, and cut it into small pieces. Put them in a bowl, add cinnamon and sugar, and let the rhubarb release its juice for about 20 minutes.
- 2After this time, drain the excess liquid and prepare the batter.
- 3In one bowl, mix flour, sugar, salt, baking soda, baking powder, and vanilla.
- 4In another bowl, mix kefir with the egg, oil, and lemon zest.
- 5Pour the liquid mixture into the dry ingredients and use a spatula to work the batter. Finally, add the drained rhubarb and mix everything again.
- 6Grease a loaf pan with a little butter and dust with breadcrumbs. Transfer the batter into the pan and bake in a preheated oven at 180 degrees for 35 minutes.
- 7After this time, check the batter with a skewer. If no batter sticks to it, you can take the loaf out.
- 8Let it cool for about 1 hour, then you can slice and eat it.
