INGREDIENTS FOR SQUID TENTACLES
- 360 g squid tentacles
- 1 onion
- 1 carrot
- 1 parsley root
- ½ leek
- 3 peppercorns
- 3 allspice berries
- 1 teaspoon salt
INGREDIENTS FOR SALAD
- 1 red onion
- 100 g yellow bell pepper
- 100 g red bell pepper
- ½ small zucchini
- 10 black olives
- 10 cherry tomatoes
- 100 g couscous
- 50 g mixed leafy salad
- 2 tablespoons olive oil
- ½ handful flat-leaf parsley
- Juice of ½ lemon
- ¼ teaspoon salt
- Pinch of ground pepper
INSTRUCTIONS
- 1Place the tentacles and cleaned vegetables in a pot. Pour in 3 liters of water and simmer for about 1 hour. Once a knife easily passes through the meat, it is cooked.
- 2Pour 200 ml of hot water over the couscous, cover, and let it sit for a few minutes.
- 3In the meantime, prepare the salad. Clean and cut the vegetables into smaller cubes. Leave the olives whole, and cut the tomatoes in half.
- 4Pour a tablespoon of oil into a pan and sauté the vegetables for about 2 minutes.
- 5Remove the tentacles from the broth, pat dry with a paper towel, and briefly grill on each side in a grill pan with a drop of olive oil. Cut the meat into 1 cm pieces and add to the vegetables. Season with salt and ground pepper.
- 6Layer the couscous, leafy salad, and then the sautéed vegetables with squid pieces on a plate. Drizzle with lemon juice and olive oil.
