INGREDIENTS
- 600 g squid (tubes)
- 250 g baby spinach
- 4 large banana shallots
- 6 cloves of garlic
- 4 sprigs of rosemary
- 1 lime
- Olive oil
- Salt
- Freshly ground black pepper
INSTRUCTIONS
- 1Finely chop the shallots and slice the garlic. Sauté the shallots in 2 tablespoons of olive oil until golden, add the garlic and let it become fragrant.
- 2Add the spinach and whole sprigs of rosemary, season with salt and pepper.
- 3Once the spinach has reduced in volume, lower the heat and let it cool.
- 4Rinse the squid, drizzle with olive oil, juice from half a lime, and season with pepper.
- 5Remove the rosemary from the spinach mixture and stuff the squid.
- 6Grill on high heat for 3-4 minutes on each side. Squid can also be prepared at home in a pan.
