INSTRUCTIONS
- 1Preheat the oven to 200 °C and place the baking rack in the middle position.
- 2Clean the potatoes well under cold water and dry them. Place each potato between two wooden spoons (or chopsticks or skewers) and slice them into approximately 1 mm thick slices. The sticks will prevent you from cutting all the way through, keeping the potato whole and intact. Arrange the potatoes in a baking dish.
- 3Cut off the 'head' of the garlic with a sharp knife, as it will not be needed. The garlic should be sliced. In a bowl, mix olive oil with spices. Salt the potatoes and season with red Kampot pepper. Then brush each potato and garlic with the oil and spice mixture. Save a little oil for later, as it will be useful for additional brushing. Place two sprigs of rosemary between the potatoes.
- 4Bake the seasoned potatoes in the preheated oven until soft and crispy. After 30 minutes, remove the potatoes and brush them with the remaining oil and spices, then return them to the oven. This will take about 20-30 minutes. It's important to watch the potatoes to ensure they don't burn, but become beautifully golden and crispy.
- 5After removing from the oven, sprinkle the potatoes with salt and freshly ground pepper. You can also add the zest of ½ a lemon or finely chopped chives. Serve warm.
Tip
About 10 minutes before finishing, you can sprinkle the potatoes with coarsely ground breadcrumbs or panko breadcrumbs to make them even crispier.
