INGREDIENTS
- 880 g zucchini
- 250 g halloumi cheese
- 150 g canned corn
- 4 large cloves of garlic
- 2 eggs
- 100 g all-purpose flour
- 100 g breadcrumbs
- 20 g nutritional yeast
- Salt
- Freshly ground pepper
- Sunflower oil for frying
INSTRUCTIONS
- 1Wash the zucchini, cut off the ends, and coarsely grate it into a large bowl. Add salt and let it sweat for about 15 minutes.
- 2Then drain the water from the zucchini and coarsely grate the halloumi into it.
- 3Add corn, eggs, flour, breadcrumbs, nutritional yeast, press the garlic, add salt and pepper, and mix everything to create a cohesive mixture that holds well when you shape it into patties.
- 4Heat a higher layer of oil in a pan and fry the patties on both sides. Place the finished patties on a plate lined with a paper towel to absorb excess fat.
