INGREDIENTS

  • 880 g zucchini
  • 250 g halloumi cheese
  • 150 g canned corn
  • 4 large cloves of garlic
  • 2 eggs
  • 100 g all-purpose flour
  • 100 g breadcrumbs
  • 20 g nutritional yeast
  • Salt
  • Freshly ground pepper
  • Sunflower oil for frying

INSTRUCTIONS

    Wash the zucchini, cut off the ends, and coarsely grate it into a large bowl. Add salt and let it sweat for about 15 minutes.

    Then drain the water from the zucchini and coarsely grate the halloumi into it.

    Add corn, eggs, flour, breadcrumbs, nutritional yeast, press the garlic, add salt and pepper, and mix everything to create a cohesive mixture that holds well when you shape it into patties.

    Heat a higher layer of oil in a pan and fry the patties on both sides. Place the finished patties on a plate lined with a paper towel to absorb excess fat.
